What Makes This Sausage Potato Soup So Good

It starts with the sausage. Cooked and crumbled, savory turkey sausage gives this sausage potato soup a deep, hearty flavor, and its flavorful drippings become the base of a rich, savory broth. Browning it first builds a wonderful foundation for the whole pot. As it cooks, it releases all of its savory, seasoned flavor right into the soup.

Then come the potatoes. Tender, cubed potatoes add heartiness and body, soaking up the creamy broth while still holding their shape. They are what make this potato soup so filling, comforting, and satisfying in every spoonful. Waxy red or Yukon gold potatoes work especially well, staying tender and creamy without falling apart.

Finally, the cream and seasonings make it shine. A simple roux thickens the broth, a splash of cream makes it velvety, and a savory blend of herbs and spices gives this sausage potato soup its rich, cozy, irresistible flavor.

Optional Pro Tip: Save Those Drippings

The secret to a deeply flavorful sausage potato soup is using the sausage drippings. Cook the sausage over medium heat to keep it juicy and to render flavorful drippings, then save a little to cook the vegetables and build the roux. That savory base adds incredible depth to the whole pot.

When you add the broth, pour it in a splash at a time and scrape the bottom of the pot to lift all those tasty browned bits. This little step builds layers of flavor and keeps the roux smooth, giving the broth its rich, velvety body. Taking your time here is what separates a good soup from a truly memorable one.

Tips for the Best Sausage Potato Soup

  • Cook the sausage gently. Medium heat keeps it juicy and renders good drippings.
  • Save the drippings. They add wonderful flavor to the roux and vegetables.
  • Cook the roux. Let the flour cook for a couple of minutes for a smooth base.
  • Add broth slowly. Pour it in splashes, scraping up the browned bits.
  • Use waxy potatoes. Red or Yukon gold hold their shape best.
  • Simmer gently. A low simmer keeps the cream smooth and silky.
  • Layer the seasoning. Taste and adjust the salt and pepper as you go.
  • Finish with parsley. A sprinkle of fresh parsley adds color and freshness.

Variations and Add Ins

This soup is easy to adapt. Here are a few simple ways to make this sausage potato soup your own.

  • Add greens. Spinach, kale, or chard wilt in beautifully for color and nutrition.
  • Add cheese. A handful of shredded cheddar makes it extra rich and savory.
  • Make it lighter. Use half-and-half or whole milk in place of cream.
  • Make it dairy-free. Use coconut milk or a dairy-free cream alternative.
  • Add spice. A pinch of red pepper flakes adds a gentle, warming kick.
  • Add mushrooms. Sliced mushrooms add an earthy, savory depth.
  • Use mild or hot sausage. Choose your favorite to set the spice level.
  • Top it off. Garnish with green onions and cracked black pepper.

How to Store and Reheat

This sausage potato soup keeps beautifully, and the flavors only deepen overnight. Store cooled leftovers in an airtight container in the refrigerator for up to four days. It makes wonderful, cozy lunches and easy dinners throughout the week.

To reheat, warm it gently on the stovetop over low to medium heat, stirring occasionally so the creamy broth stays smooth. Add a splash of broth or milk if it has thickened. It also freezes well, so you can make a big batch and save portions for a cozy meal later. Just thaw it overnight in the refrigerator before warming it through.
