My name is Emily Carter, I’m 36 years old, and I live in Sarasota, Florida — where the sun shines almost every day, and the air carries hints of sea salt, citrus, and something fresh baking in the oven. Our kitchen is open, bright, and full of life — it’s the heart of our home. I grew up believing food was more than just fuel. It was love, comfort, joy. And that joy? It came from my mom, Linda. She’s 61 now, more vibrant than ever, and she believed in balanced, low-carb living long before it was trendy.

I never imagined I’d be sharing recipes online. For years, I was simply a mom baking cookies with my daughter, Chloe. She’s eight now — curious, full of energy, and always ready to grab her apron and get her hands messy. One sunny afternoon, as we baked almond flour cookies with my mom, Chloe looked up and said, “Why don’t we show people how we do this?” And that’s how Low Carb with Love was born.

That moment — three generations baking together — means the world to me. It wasn’t perfect. It was real. And that’s exactly what this blog is about.

In the beginning, I scribbled family recipes in notebooks, tested them endlessly, and learned how to photograph dishes that weren’t always picture-perfect. Over time, the blog grew — and not just because of me. My incredible friends — Amelia, Isabella, Olivia, and Sophie — became part of this journey in the most beautiful way. Amelia builds and saves our website (especially when I break it). Isabella helps shape each blog post into something meaningful. Olivia captures the mood behind the meals with her camera. And Sophie brings each page to life with her eye for design.
