Method
 

  1. Finely chop the onion, carrots, and celery using a chef’s knife or food processor.
  2. Cook the turkey bacon in olive oil and melted butter for 3 to 5 minutes in a large pot.
  3. Add the chopped vegetables and a pinch of salt. Cook for 3 to 4 minutes.
  4. Add the ground beef and cook until browned and most of the liquid has evaporated.
  5. Add the chicken broth and apple cider vinegar. Cook for 3 to 4 minutes, then stir in the tomato paste and cook another 2 to 3 minutes.
  6. Add the tomatoes with their juices, cheese rind, nutmeg, salt, and black pepper. Cover and simmer on very low for 4 to 5 hours, stirring occasionally.
  7. During the last 30 to 60 minutes of cooking, stir in the milk.
  8. Cook the pappardelle until al dente. Reserve 3/4 cup pasta water, drain the pasta, then toss with the bolognese sauce, reserved pasta water, and grated Parmigiano Reggiano. Serve with extra cheese and black pepper if desired.
